Sundried Tomato Pasta

 

The only thing better than sundried tomatoes and pasta, is how fast this meal comes together!  So let’s not waste anymore time!  You need to make this NOW!

 

Sundried Tomato Pasta

Ingredients:

Pasta – your choice.  I used Linguini because it is what I had in the pantry.

5-6 Sundried Tomatoes, plus 1 T of their oil

A nice handful of raw cashews

1 T Nutritional Yeast

1 T Tomato Paste

1 1/4 c Vegetable Broth

Directions:

In a pot, boil the water for your pasta.

In a blender, add the sundried tomatoes and oil, cashews, nutritional yeast, tomato paste and broth.  Blend on high until completely pureed and you have a smooth sauce.  In a separate large pot, add the sauce and simmer gently.

When pasta is cooked, drain and add to the sauce.  Mix well to combine.  Serve with parmesan cheese, basil and pepper.

That’s it!  In the time it took your pot of pasta to boil, dinner is ready!
