Creamy Potato Soup (Non Dairy)

We may not be getting all of the snow down south here that our northern and western friends and family are getting, but there is no shortage of chilly, rainy days!  The chillier and rainier the weather, the better a nice pot of homemade soup on the stove sounds!

Non dairy doesn’t mean you have to give up the creaminess and thickness of dairy based soups.  There are several ways to retain that creaminess, but raw cashews are my go-to.

Here is my recipe for a delicious (and nutritious) pot of creamy potato soup that is loaded with flavor!  Even dairy lovers will likely agree that it is hard to tell it is non dairy!

Ingredients

1 c Raw Cashews

1/2-1 C Oat Milk

1/4 c Nutritional Yeast

1 T Avocado Oil

2 T Plant Butter

3 Leeks, sliced thin

2 Shallots, sliced thin

3 Large Russet Potatoes, washed and cubed into 1 in. cubes

4 stalks of Celery, washed and chopped

2 T Minced Garlic

2 t Smoked Paprika

1 T Dried Thyme

1 T Turmeric

Salt and Pepper to taste

6 c Vegetable Broth

Directions

In a small pot, cover raw cashews with water.  Bring to a boil and remove from heat.  Set Aside.

In a large soup pot or dutch oven, heat the avocado oil.   Add the leeks, shallots and celery.  Sauté just until they start to sweat.

Add the plant butter, garlic, paprika, thyme, turmeric, salt and pepper.  Sauté until butter is fully melted and veggies and spices are very aromatic.  Do not brown.  Add the potatoes and continue to sauté for another 3-5 minutes, stirring until well combined with seasoning and vegetables.

Add the vegetable broth, stir and simmer until potatoes are cooked through.

Drain cashews from water, add to a high speed blender.  Add 1/2 c oat milk.  Blend for 30 seconds.  Add milk until a smooth, creamy consistency is met.  The thicker the consistency, the thicker your soup will be.  I went for a consistency similar to a very soft custard.  Add the nutritional yeast and blend for another 30 seconds.  Texture should be smooth and creamy.

Add cashew cream to the pot of soup and stir in until well combined.  Remove from heat and let sit for about 30 minutes, stirring occasionally.

Serve and enjoy!

Creamy Potato Soup served with a gooey grilled cheese sandwich (also non-dairy). Total comfort food!
