Love Them, But Leave Them – The Burrowing Owl
Owls come in all shapes and sizes, with about 19 different species of owls in the United States alone. While some owls are able to adapt really well throughout the world, there are some species who are struggling to survive. This post is about one of the species that is struggling – the Burrowing Owl. My first encounter with a Burrowing Owl was about three years ago when we first visited the Las Vegas area. The owl was sitting in the gravel, in the middle of the day, as we walked past. I’m not even sure how I noticed it, it sat so still and blended in with the surroundings. …

A Date For Horchata
While Cinco De Mayo is certainly a good date for making Horchata – I am talking about the fruit date. Horchata (pronounced or-cha-ta), is typically a sweet, milky drink that was originally made from ground tiger nuts, and was very popular in Spain. Most people however, are more familiar with the version made popular in Mexico, which is usually made from rice milk and LOTS of sugar! In recent years, Horchata has really caught on as a “trendy” drink, and you can find it everywhere from restaurants to coffee shops to cartons of it in grocery stores. It wasn’t until this past visit to New Mexico that I had actually had my very…

The People We Meet
We often run into people in our travels, that like to share their stories with us. The other evening, as I was out walking, I came upon a fellow walker, who was also out enjoying the evening. He had stopped to watch a couple of planes fly over, and it was at this time, that I caught up to him. As we walked, he told me about where he and his wife had just travelled from, and where they were headed. We walked for some time, as he told me about travels around the world that he and his wife had taken over the years. He had retired from the…

Hummus Where The Heart Is ❤️
If you love hummus, but normally buy it, you are going to love this recipe! It is so quick and easy to make – you more than likely have most of the ingredients already! It tastes so much fresher than store bought, and it is also, so much cheaper! If you have never had hummus, then you should give it try! Hummus is a dip – or a spread – that is made from chick peas and tahini (made from toasted, ground sesame). Store bought brands of hummus can vary in their ingredients, as well as their nutritional value. By making it at home, you know exactly what you are getting…

Old Town Mesilla – Las Cruces, New Mexico
“…It’s downtown Old Mesilla, Friday night La Posta, with friends and margaritas…” -Bri Bagwell “Las Cruces” It had been a long day of driving through the big state of Texas, so when we pulled into the rv park in Las Cruces, it was nice to know we could relax for a day. Kerry Apple Cake – A “Pinch Proof” Dessert
“All living things, must be fed” -Irish Proverb …And this Kerry Apple Cake is the perfect dessert to feed someone this St. Patrick’s Day! It is hard to find any real background on the origin of this cake, but, from what I have found, it seems to have originated in County Kerry Ireland. It was originally prepared and baked in a cast iron pot called a Bastible. In the nineteenth and early twentieth centuries, bastibles were the primary cooking tool. Most…

A Few Bites and Sights In Baton Rouge, LA
“…I’m a thoroughbred racin’ at Louisiana Downs Avery Island and a Catahoula Hound I’m the Louisiana Hayride and the birth of the Blues the Evangeline, Chickory Coffee and Baton Rouge…” “I Am Louisiana” Written by Paul Ott We left the East Coast on the night of January 30th. A large winter storm was quickly making its way across the country and up the coast. As we packed up, and hit the road, we were focused on staying ahead of the storm. For the first couple of days, we drove as far as we could, pulling over only to rest for a couple of hours at a time. We…

Happy New Year – 2021!
2020 went out – on a pair of cross country skis. Just inside the Lolo National Forest, on a section of closed road, I put cross country skis on for the first time. It was so peaceful, you could hear the snow falling…that is, until I put the skis on and started skiing. All I could hear at that point was my clumping in the snow. It took me a little while to get the hang of “gliding”. I’d like to say that I eventually figured it out – and maybe I did – but I still managed to fall face first into the snow just 50 yards from the end. …

Christmas Goody Baskets – The Recipes For 2020
As a child growing up in a family that loved to cook and bake, giving cookies at Christmas was something I always looked forward to. We gave cookies to neighbors and delivery people as a way to show our appreciation for them throughout the year. As I grew up and moved away, I continued the tradition of the Christmas cookies every year. I would mail cookies home, and hand some to my neighbors. In the beginning, it was usually just one type of cookie, on a plate, with some saran wrap and my awful attempt at a bow. Looking back, it was probably an awful attempt at cookies as well…
